Join Clay Morris, Professor of Appalachian Foodways, for an immersive foraging experience in the heart of the Shenandoah Valley hosted by L’Auberge Provencale. In this hands-on class, participants will explore the region’s rich natural landscape, learning the history and traditional practices of foraging by indigenous peoples, as well as the ecological importance of native plants. With Clay’s expertise, you’ll identify a variety of edible plants, mushrooms, and wild ingredients that have long been staples of Appalachian cuisine.
