Chef Colby
Colby currently helms pop up restaurant Mycelia. Mycelia takes its name from mycelium – the underground network that connects ecosystems – a fitting metaphor for the way the concept brings together chefs, farmers, guests, and the land through immersive hospitality experiences. Colby grew up in Carroll County, Maryland. He attended Pennsylvania College of Technology and received a Bachelor’s degree of Science in Culinary Arts & Systems. He’s travelled the country, working at many esteemed restaurants, including 3 Michelin starred, Singlethread Farm, Restaurant, and Inn, Troubadour Bread & Bistro and The Restaurant at Patowmack Farm.
